In full disclosure, I got my inspiration for this recipe from a user added Weight Watchers recipe–I saw it once–printed it–used it–loved it. Tried to find it again–no luck. I’ve seen multiple variations of these meatloaf cupcakes most of which use a bag of instant potatoes and stuffing mix. I’ve been trying to eat more REAL food and less processed junk–so it does effect the points value but that’s okay. The benefits of real food make it worth it. Made this variation of the recipe last night! It was pretty delish!
I love this because it’s fast (15-20 minutes), easy and Baby T LOVES it!
First get the potatoes going (since they ALWAYS take longer than expected)
- Quarter 8-10 red potatoes and boil til tender
Once those are in the pot get meatloaf going.
- 3 slices of bread torn into itty bitty pieces (I use Arnold’s HealthFull Multi-Grain)
- 1/2 lb ground turkey
- 1/2 lb ground beef
- 1 1/2 cups diced mushrooms
- 1 small red onion diced
- 2 T Steak Sauce
- 2 T Worchestire Sauce
- Salt/Pepper (to taste)
Preheat Oven 350 degrees
Mix first 6 ingredients together in a mixing bowl, get dirty mix with your hands! Then add the liquid ingredients–mix well.
Spray muffin tin with non-stick cooking spray
Fill each muffin “cup” with the mixture. Make sure to smoosh it down good. You want the meat just below or level with the top of the tin.
Bake for 10-12 minutes. They should pop out of the tin easily with a fork (there may be some liquid left in the bottom of the muffin tin–this is normal).
This will make about 10 meatloaf muffins.
- 1 T butter
- 1/3 C. unsweetened plain soymilk
- Salt and Pepper (to taste)
Drain the boiled, fork tender potatoes and add to mixing bowl with butter, and soy milk, whip with electric mixer. Add salt and pepper to taste.
You may choose to top the meatloaf with mashed potatoes to make them meatloaf cupcakes 🙂

I typically serve this with a green salad (the one pictured here looks pretty pathetic, no?) or broccoli.
